I understand these sensors work when a metal object is placed near the sensor, but what happens electrically? I have a 12v proximity sensor what reading should i be able to see on my meter when I place a metal object near sensor?

Any information on the matter would be gratefully received

Do a search for NPN or PNP inductive sensors. This should answer all your questions and there should be a ton of examples.
