I am running ROS1 on Noetic ninjemys and Ubuntu 20.04. There are Like 6 setups offered on the ROBOTIS WEB page now.
I have my pi4 working with the ROS1 and the Raspberry pi3B+ on ROS2 with Dashing and Ubuntu 18.04.
I really don't have any reference material for ROS2 {Books}. Any ideas?

The best way to learn ROS is to start picking apart modules and see how they work, then start writing your own modules (perhaps just something dumb that talks to an Arduino on a serial port to flash a light or whatever.)
